My coco and banana pudding invention

I did it after watching one of the Nigel Slater's show which I'd seen on the BBC (One).
The important thing I discovered about puddings in general is a proportion of butter/sugar/flour for getting a right consistency cake - not stodgy but spongy and moist enough.

My Coco Banana pudding recipe

140 g butter
140 g sugar
2 eggs
pinch of salt
140 g white flour
1 teaspoon baking powder
1 bananas
1 table spoon cocoa powder
handful of coconut chips
10 stoned prunes, roughly chopped

Preheat oven at 200 degrees. Butter the baking form slightly.

1. Beat butter and sugar by mixer.
If the butter is frozen cut it or leave for a while to make it softened. Chop the butter before blending with the sugar and it will be easier to get a smooth creamy substance.
2. Add eggs and beat the mixture until completely combined.
3. In a separate bowl mix flour and baking powder.
4. Sift into the butter-sugar-egg and mix well.
5. Crumble banana flesh in a separate bowel, put the cocoa powder and stir.
6. Put the coloured banana flesh with the prunes and the coconut chips into the dough and stir.
7. Fill the baking form with the dough and bake for 35 min.

The pudding was just great!
